Cheesey Broccoli Pasta | Hyde Park Moms



1 bunch or 3 heads of broccoli, chopped
1 small shallot, diced
1/4 cup olive oil
1 smashed garlic clove
1/2 cup parmesan cheese*key ingredient
1/2 cup shredded mozzarella cheese
Any other cheeses your family likes!
1lb whole grain pasta (we love Eat Banza for gluten free pasta!)

How to Make
Add olive oil to pan and saute the shallot and smashed garlic clove for 1-4 minutes. Add in broccoli and cook until soft. Boil water and cook pasta to instructions. Strain the pasta into your serving bowl (keep extra pasta water to add to final dish). Add in cheese and broccoli and olive oil. Toss and serve!
