I live for this salad during the week. It’s super healthy and packed with fiber and fat to keep you fueled. Take a short cut and use Trader Joe’s shaved brussel sprouts – game changer and time saver!
Ingredients
- 1/2 – 1 bag of shaved brussel sprouts form Trader Joe’s (or 1 lb of brussles, sliced or shredded)
- 1 small shallot, sliced
- 1 tbs dijion mustard
- 1 tbs maple syrup
- 1/4 cup feta cheese
- 1/4 cup pomegranate seeds
- Sliced almonds
- Grated parmesan cheese
- 1/2 of an avocado, diced
- Salt and pepper
How to Make
- Sauté shallot in olive oil until soft
- Add in brussel sprouts and cook until they are soft and slightly browned
- Right in the pan, add in the dijon mustard and maple syrup, toss until it’s all combined
- Grate in parmesan cheese and toss
- Move to bowl and top with feta cheese, sliced almonds, avocado and pomegranate seeds
- Enjoy a yummy lunch for 1 and save the rest!
