I live for this salad during the week. It’s super healthy and packed with fiber and fat to keep you fueled. Take a short cut and use Trader Joe’s shaved brussel sprouts – game changer and time saver!

Ingredients

  • 1/2 – 1 bag of shaved brussel sprouts form Trader Joe’s (or 1 lb of brussles, sliced or shredded)
  • 1 small shallot, sliced
  • 1 tbs dijion mustard
  • 1 tbs maple syrup
  • 1/4 cup feta cheese
  • 1/4 cup pomegranate seeds
  • Sliced almonds
  • Grated parmesan cheese
  • 1/2 of an avocado, diced
  • Salt and pepper

How to Make

  1. Sauté shallot in olive oil until soft
  2. Add in brussel sprouts and cook until they are soft and slightly browned
  3. Right in the pan, add in the dijon mustard and maple syrup, toss until it’s all combined
  4. Grate in parmesan cheese and toss
  5. Move to bowl and top with feta cheese, sliced almonds, avocado and pomegranate seeds
  6. Enjoy a yummy lunch for 1 and save the rest!
