Everyone needs a staple veggie soup for a cozy weeknight dinner. This is the easiest soup recipe I have made yet. Grab a mug, snuggle up with the family and enjoy this tasty (and healthy) soup!
Ingredients
- 1/2 or small yellow onion
- 1 smashed garlic clove
- 2 tbs Italian seasoning
- 1 zucchini, chopped
- 1/2 28oz can whole tomatoes (KEY to use whole tomatoes here! They will break down in the soup)
- 1-2 cups of fresh spinach (or any veggie you have on hand)
- 3/4 to full bag of frozen veggie medley (I use the 365 Whole Foods one)
- 1 16oz box of low-sodium chicken broth
- Salt and pepper
How to Make
- Heat 3+ tbs olive oil on medium heat
- Slice onions (find it so much tastier to slice them rather than dice) and smash 1 garlic clove and toss it in to sauté with onions
- Chop 1 zucchini and add to pot (Chop and add in any other veggies here too! I added spinach)
- Once veggies are slightly browned and cooked, add in frozen veggie medley
- Add in Italian spices and salt and pepper to taste
- Add in whole tomatoes and it’s juices
- Add in box of low-sodium veggie broth
- Let it all come to a simmer for 30-45 minutes (or just on low all day in the crockpot)
- Serve with oyster crackers and enjoy. Even better the next day!
