Dill Tuna Salad | Hyde Park Moms

I made this today for lunch and I had to tell you about it! I am often lost when it comes to lunch for myself (who has the energy), so I attempted a recipe for tuna salad (super inexpensive) I had some fresh dill and dill pickles in the fridge – voila! Dill Tuna Salad was born. It’s super flavorful, easy and packed with good stuff to keep us going throughout the day. I’ll be making this one to help me steer away from the leftover PB&J and goldfish we are serving most days during quarantine! Share with us if you make it @hydeparkmoms.
INGREDIENTS

  • 2 cans of tuna (no salt added)
  • 1 celery stack finely diced
  • 2 dill pickles finely diced
  • 1 TBS dill (fresh is best, 2 tsp if dried)
  • 1 TBS dijon mustard
  • 1.5 TBS mayo
  • salt and pepper
  • juice of 1/2 lemon

HOW TO MAKE

  1. Combine dill, mustard, mayo
  2. Add in celery, pickles and tuna
  3. Mix until totally combined
  4. Add lemon and salt & pepper to taste

ENJOY!
